I’ve decided to test Duvel Citra Hop for gluten using the EZ Gluten test kit. My desire to run this test stemmed from getting consecutive <10ppm gluten results on Duvel Golden Ale. My theory for why some Duvel beers may be <10ppm gluten is due to multiple idiosyncratic brewing techniques. The first is likely addition of a Gluten Degrading Enzyme (GDE) such as Aspergillus niger Prolyl Endopeptidase or more plausible, papain from papayas. Second would be the, in bottle, secondary fermentation with artisinal yeast strains.
Indeed, the results came back negative for Duvel Citra Hop, <10ppm gluten.
