The other online blog that tests beer for gluten uses the lateral flow sandwich assays Imutest and GlutenTox. These assays do no have the hook line that EZ Gluten has. The hook line rules out false negative in samples with high gluten levels and is the main reason it is superior to Imutest and GlutenTox. One caveat to all three of these assays is that they are sandiwch based, e.g. need two eptiopes to work. However, I believe that any gluten that has been broken down and degraded so much that it only contains one epitope, would be susceptible to gastrointestinal proteases (chymotrypsin, pepsin, brush border enzymes) and unlikely to stimulate an immune response.
